In Mexico, poblano peppers are a staple, much like bell peppers in the US. They’re used in a variety of dishes such as salsas, moles, and posoles. When you need something quick and meatless, this dish is a go-to. Charred poblano peppers mixed with salsa and cheese make for an easy and flavorful meal. I like to char at least three sides of the poblano peppers, although they can be quite flat, making it tricky to char all sides evenly. This dish can be served with rice or as a side dish.
