Tacos de Cachete are a beloved street food in Mexico, known for their rich, tender beef cheek meat. Though some may shy away due to its origin, those who try it fall in love with the deep, flavorful taste. The meat is incredibly tender and juicy, thanks to its high fat content, which melts down during cooking, leaving behind a succulent, melt-in-your-mouth texture. My dad likes to mix the remaining fat back in, but I often remove a bit when chopping. Even my daughter and her boyfriend can’t resist these tacos — now they’re his favorite too!
