Many local Mexican grocery stores now offer cow’s heads split in half, and you can also order directly from ranchers.
If the head is too tall for your pot, simply create a dome or cone-shaped lid with foil, ensuring it fits tightly around the rim of the pot. You’ll be amazed at how much meat you can extract! The meat has a texture reminiscent of fried chorizo—it’s rich and satisfying. Some parts melt in your mouth like butter, similar to bone marrow. Each component of the head—brain, cheek, and tongue—offers unique textures and flavors, but I prefer to combine them all for a truly delicious experience.
